Only some recommendations for restaurants that we have considered excellent:
Peninsula Valdez: the Estancia "Faro Punta Delgada, also possibility of accommodation.
El Chalten: "Mahuida Ruca" (very special local dishes)
Calafate: "The Table" can not miss the wine recommended "Ruca Malen"
Punta Arenas (Chile): "La Pergola" (Jose Nogueira Hotel restaurant)
Ushuaia: The tenedor of libre "Rueda", but also many others.
Buenos Aires: "The broccolino" (Cordoba y Esmeralda);
"Spettus" (Puerto Madeiro)
I do not know if you do the north, but a good and economic alternative accommodation for the Iguazú Falls, the village is "American Viejo" 2 km from Puerto Iguazu.
A pleasant surprise for us was the visit all'esteros dell'Ibera in the province of Corrientes, a swampy area of marshes and a paradise for birds (over 350 species). If a possibility of accommodation in Colonia Pellegrini is the Hostaria "YPA Sapukai"
If you happen to have to stay in transit between Chile and Argentina try Posada Tehuelche 10 km from the ferry port of Ponta Delgada on the Straits of Magellan (in the continental side).
